  1. Pour oil into a non-stick pan heated to med-low. Add shallots and fry until fragrant and slightly translucent, 1 or 2 minutes.

  1. Add cabbage to pan, stirring occasionally until it softens, around 3 - 4 minutes. If it is browning, reduce heat

  1. Add beans, tomatoes and spices. Mix until everything is well coated. 

  1. Pour in ½ a cup of water, and reduce heat to low. Cover with a lid and let simmer for 5-10 minutes until tomatoes start bursting.

    You can speed up this process by piercing them gently with a sharp knife after they get hot, but be careful of splashing tomato juices. They can be like little balls of lava ;) 
  1. Taste-test and add seasoning if needed. Next, make a small well and crack an egg into it. Repeat with remaining 3 eggs. 

  1. Cook covered another 5 - 10 minutes until the eggs are set to your liking.

  1. Transfer to bowls, add feta if using, and top with chopped parsley and fresh cracked pepper. Serve with crusty bread and enjoy.
