A simple recipe with summer staples

Summer Star Ingredients: Tomatoes and Basil

I don’t know if you’re a gardener or not—and honestly, it doesn’t matter whether you’re tending a few pots on a windowsill or managing an industrial-sized greenhouse—there’s a simple, undeniable joy in using fresh, hand-picked ingredients.

Long before we moved into our house, I grew herbs, lavender, tomatoes, and more on our condo balcony. (And the “more” included a range of enthusiastic experiments—some more successful than others—like zucchini, celery, and a few things that never quite made it past the seedling stage.) But aside from herbs, cherry tomatoes have always been my most reliable summer staple. Even now, a bowl of them rarely lasts long on the counter—my daughter loves to sneak a few whenever she passes by.

One of my favorite parts of cooking in the summer is wandering out to the garden to gather ingredients. There’s something deeply grounding about it—especially when I’m barefoot, moving slowly, picking what I need as I go. This simple tomato and basil salad captures that feeling perfectly. It highlights the natural sweetness of ripe tomatoes, the fragrance of fresh basil, and finishes with a touch of salty feta for contrast.

I tend to grow smaller varieties like cherry or grape tomatoes since they produce generously, but this recipe works beautifully with any tomatoes you have on hand—homegrown or store-bought. For this version, I used a mix of golden grape tomatoes and slightly larger cherry tomatoes for a bit of color and variety. The dressing is intentionally simple—so simple, in fact, that I often drizzle the ingredients directly over the plate—but you can absolutely mix it in a bowl if you prefer.

This salad is best enjoyed fresh, ideally on a warm day, perhaps just after stepping in from the garden—barefoot, with a bowl in hand.

I still have some other summer staples like: gooseberries, black currants and sour cherries that will be coming up in my next few recipes.

Instructions

  1. Slice your tomatoes into thick rounds. If using cherry tomatoes, simply halve them. (Personally, I love the look of rounds when possible—it feels a little more composed on the plate.) Arrange the tomatoes evenly, alternating colors if you’re using a mix.

  1. Stack the basil leaves, roll them into a tight tube, and slice into thin ribbons. Sprinkle the basil evenly over the tomatoes.

  1. Crumble the feta over the top, allowing it to fall naturally between the slices.

  1. In a small bowl, mix the olive oil, white wine vinegar, salt, and pepper. Drizzle the dressing over the salad just before serving.

Note

Go lightly with the salt at first—you can always add more, but the feta already brings a lovely salty balance to the sweetness of the tomatoes.
